2023  SENSORIA PRISM Vintage Summary:

Perched above 1,000 feet in the Moon Mountain District, the Nunery vineyard is defined by steep volcanic slopes, iron-rich soils, and organic mountain farming. Cabernet Sauvignon thrives in the sunlit exposures, delivering structure and intensity, while Cabernet Franc finds finesse and aromatic lift in the cooler, wind-swept upper blocks. The 2023 season brought a long, temperate growing period, with a cool spring and slow-building summer warmth — allowing for extended hang time, full phenolic maturity, and the tension and clarity that define mountain-grown wines rooted in place.

Winemaking

Guided by winemaker Tony Biagi, the team harnessed the power of mountain-grown fruit using 80% new French oak barrels to shape a wine of depth, structure, and precision. Sourced from the high-elevation blocks of Moon Mountain, this blend fuses the rich flavors of Cabernet Sauvignon with the lifted aromatics and minerality of Cabernet Franc. The result is a wine that balances intensity with elegance. Allowing for many interesting food pairing options.

Aroma and Bouquet

The nose on this inaugural vintage of this wine opens with a captivating interplay of roasted pepper and fresh red fruit, creating an aromatic tension between savoriness and brightness. Pomegranate and red currant bring a vivid, radiant core, while a delicate trace of rose petals adds a perfumed elegance. Spearmint and dusty gravel introduce a cooling minerality that brings definition and lift. Hints of cinnamon and warm spice surface, adding gentle comfort to a vibrant, finely detailed aromatic impression.

Tasting Notes

The palate shines with pure, red-fruited vibrancy, led by notes of raspberry and pomegranate. Iron and crushed stone define the wine’s mineral core, drawing out a subtle sweetness in the fruit and a faint saline edge that adds a mouthwatering vibrancy. Spices of cinnamon and clove ripple through the finish, while defined, chalky tannins frame the wine with precision.

Serving Suggestion

This wine drinks beautifully now especially with decanting (90 minutes) and will continue to improve over the next twelve years and gracefully age for another two decades.

The Sensoria Prism label is inspired by a microscopic photograph of wine crystals captured under light. Formed naturally during fermentation and aging, these crystalline structures refract light into subtle spectrums of color—revealing an unseen geometry within the wine itself.
