We wanted to make a wine for restaurants, bars, and relaxed occasions, it offers an approachable expression of NEOTEMPO’s winemaking and organic-farming philosophy from a mountain site, a food friendly Cabernet at an accessible price.
Sensoria Prism serves as a companion the rest of our portfolio, highlighting purity and vibrancy over power. Sourced from a single organically farmed family owned vineyard, it delivers clarity, freshness, and value without compromise.
Since beginning our collaboration with vineyard guru Phil Coturri and winemaker Tony Biagi, we’ve been scouting compelling new vineyard sites across Napa and Sonoma. We became particularly captivated by the Moon Mountain AVA, whose dramatic volcanic terrain sits just across the Mayacamas from Oakville — one mountain spanning two counties, unified by its intensity of light, slope, and stone.
The Nunnery Vineyard, replanted after the 2017 fires under the direction of Phil Coturri — a pioneer of organic and biodynamic farming — now stands as a living symbol of renewal. Perched high on the rugged slopes of Moon Mountain, the vines are rooted in iron-rich volcanic soils and thrive in lean, rocky conditions that concentrate flavor while preserving lift and freshness, translating the mountain’s resilience into every glass.
The Vintage & Winemaking
2023 was an exceptional year for moon mountain, defined by moderate temperatures, long hang times, and even ripening, which allowed for ideal phenolic development without excessive heat or stress. These balanced conditions yielded wines of freshness, purity, and fine structure.
Composed of primarily Cabernet Sauvignon with a touch of Cabernet Franc, the fruit was hand-harvested from the Nunnery Vineyard and aged for 18 months in 80% new French oak.
The result is a wine that mirrors NEOTEMPO’s disciplined sense of balance while expressing a brighter, more lifted side of mountain Cabernet.
Sensoria Prism reveals a vivid spectrum of pomegranate, raspberry, and red currant, accented by a distinct mineral edge and subtle saline note. Hints of spearmint, cinnamon, and crushed stone bring aromatic lift and precision.
